Broken eggs with sobrasada are a dish that is as easy to prepare as it is tasty.
Personally I prefer to fry everything with olive oil, and if possible extra virgin, but that’s up to you. My arguments are, the flavor, and the possibility of using it several times, after decanting it, since it maintains its characteristics after several uses, beyond what other oils can do.
As far as potatoes are concerned, there are various types or varieties, the best suited to this dish are the new potatoes, which are sold with the indication “for frying”, but it is such a tasty dish, that I dare say that with the ones you find at home it will surely come out wonderfully.
And what about the eggs… if you don’t have your own chickens, which is my case, I recommend you try chicken eggs from an organic farmer. It is one of the foods I find most different when it comes to organic products.
And make sure that the sobrassada is Sobrassada de Mallorca. It’s not so hard to get it these days. If you can’t find it in your usual delicatessen, you can buy it in our online shop. We’ll get it home to you for a very reasonable price.
Recipe for broken eggs with sobrasada
4 medium potatoes
2 garlic cloves with their skin
olive oil and salt
Peel and wash the potatoes well. Cut into irregular cubes and fry them together with the garlic cloves in a frying pan with very hot oil.
When the potatoes and garlic are slightly brown, take them out and drain them on absorbent paper to remove excess oil. Add salt to taste and fry the eggs in the same oil.
Add small pieces of sobrassada on top of each egg so that they melt, giving more flavour to the whole when the eggs are broken.
